- 1 bag Livin’ on the Vedge Dumplings
- 2 small cucumbers, thinly sliced
- ½ cup cilantro leaves
- 2 scallions, thinly sliced
- 8 oz silken tofu
Spicy sesame soy sauce
- 2 tsp sesame seeds
- 2 tsp sesame oil
- 2 tbsp soy sauce
- 1 tbsp chili oil
- 1 tsp fish sauce (optional)
- 1 tbsp rice vinegar
- Pinch of sugar
Instructions
- In a small bowl, whisk together the spicy sesame soy sauce ingredients. Set aside.
- Pan sear the veggie dumplings according to package instructions.
- In a large bowl or plate, assemble the sliced cucumber, pan seared veggie dumplings, and chunks of silken tofu. Pour the sauce evenly across the salad.
- Garnish with cilantro leaves and sliced scallions.
